Dry ice has a temperature of -78.5°C and maintains a constant temperature over a long period. Furthermore, dry ice leaves no liquid or solid residue when it sublimates.

Therefore, putting the correct amount of dry ice in a specially designed container or trolley containing prepared meals allows you to keep complete control of the temperature up to the point of heating or re-heating.

Dry ice is used in the airline industry for in-flight catering. It keeps food chilled or frozen until ready to prepare or serve, predominantly on long-haul flights.

With no refrigeration onboard aircraft, dry ice slices are put into specially designed bags fitted inside trolleys and stores to preserve and maintain food temperature.

As the dry ice sublimes, it leaves no residue to contaminate or compromise food quality.
